Ham, Spinach & Potato Frittata

These days, it is a little bit tough to get everyone fed, and to make sure that we are eating healthy food. Sleep is lacking, for sure, and it’s tempting to just grab something that’s not as healthy to eat at mealtime.

Ingredients
  • 8 eggs
  • 1 potato peeled and diced
  • 1/4 cup onion chopped
  • 1/2 cup ham diced
  • 3/4 cup baby spinach
  • 1/4 cup water or non-dairy mik

Instructions
  1. Preheat oven to 400 degrees. Whisk eggs and water or cream in bowl, season with salt and pepper.
  2. Add all other ingredients and mix. Pour into deep dish pie plate.
